Thirsty Thursday - Healthy Edition

I'm a newbie to juicing, so naturally I scoured the internet/blogs looking for tips & recipes. Not going to lie, there's an over abundance of info out there - one can get overwhelmed, easily.

Here are a few tips -
- I like to use coconut water over plain water, for all of it's benefits including, being low in calories, high in potassium & super hydrating, just name a few
- I like to use frozen fruits, eliminating the need for ice [which can in turn water down your smoothie]. You just want to be careful when buying frozen fruit, make sure it's not drowned in sugary juices. If using use fruit, just wash, peel, portion the fruit & store in the freezer, for when you're ready to use.
- Lastly, [I learned this the hard way] you should blend in stages - blending your greens w/your water first [this eliminates leafy chunks] NO one likes leafy chunks!

Here is a quick & easy go-to recipe -

Ingredients -

- 2 cups of greens of your choice (I had baby spinach on hand)
- 8 oz of coconut water
- 1 cup of frozen mixed fruit (banana, strawberry, pineapple)

So once again, you blend the greens & water first. Then add frozen fruit & enjoy! Let me know if you try it & like it. Also if you have any recipe ides to share.

Thirsty Thursday!

What Latino holiday party will be complete with out some “Coquito”; it’s the Puerto Rican version of eggnog, made with coconut and rum. DELISH!

Ingredients

2 Jumbo Eggs
2 Egg Yolks
1 14 oz can of sweetened condensed milk
1 15 oz can of cream of coconut
1 12 oz can of evaporated milk
1 cup of heavy cream
¾ to 1 cup of light rum

In a blender, combine the eggs and egg yolks; blend on high until the eggs are pale yellow and very light. With the motor running, one at a time, slowly add the condensed milk, cream of coconut and evaporated milk. Blend for a minute or so, then with the motor still running, slowly add the heavy cream. Blend until just incorporated.

If while preparing the coquito your blender becomes too full, simply transfer some of the mixture to a serving pitcher, then continue as directed. Then add the remaining coquito to the pitcher and stir well, chill for 2 to 6 hours; it's best if done the night before, this way all the flavors set in.

Happy Holidays!
